Hot Chocolate Cookies

Hot Chocolate is my kiddos FAV winter treat.  Heck, they even request it when it's warm!  When I found this recipe about 5 years ago I was intrigued.  Hmmmm....what would a Hot Chocolate Cookie taste like?  Pure bliss that's what!!! No, these aren't healthy per say but they are WORTH IT!


HOT CHOCOLATE COOKIES
Yields about 3 dozen cookies

Ingredients: 
2 sticks room temperature butter
1 cup sugar
2/3 cup brown sugar
2 eggs room temperature
1 tsp pure vanilla extra
3 1/4 cups flour
4 packages or 1/2 cup Hot Chocolate Mix (not sugar free)
1 tsp salt
1 1/4 tsp baking soda
1 cup milk chocolate chips
2 cups mini marshmallows

Directions: 

1) Preheat your oven to 350 degrees.  
2) Cream together both sugars and the butter until light and fluffy in a stand mixer.  
3) Slowly mix in the eggs and vanilla.
4) Slowly add in all dry ingredients, scrap the sides as needed.
5) Lastly stir in chocolate chips.
6) Line cookie sheets with parchment paper and drop cookie dough, I use a 1 T sized ice cream scooper.
7) Bake cookies at 350 degree oven for 9 minutes.  Remove from oven and top with 5-6 mini marshmallows, gently pressing them in a bit and cook an additional 2 minutes to where the marshmallows start to puff. 
8) Let cool a few minutes before removing from the pan (this helps them not break or loose shape). ENJOY!!

Chia Pudding

A great on the go breakfast, snack or dessert is Chia Pudding!! It is best made let sit overnight!! I love to make mine in mason jars so I can easily grab and go. As a Mom of 3 I'm eating on the run a lot and this recipe is a sweet healthy treat.

Chia Pudding


Ingredients:
2T Chia Seeds
1/2 cup unsweetened almond milk
1 tsp vanilla extract
1/2 packet stevia

Directions:
Combine all ingredients and mix well. Pour into a bowl or mason jar and let sit for a few hours or overnight (the chia seeds swell and absorb the liquid). Place in refrigerator for 4-6 hours. Enjoy!

Pumpkin Lactation Cookies

When I was nursing and pumping for my 3rd child I was OBSESSED with Lactation cookies!!  I would eat 2-6 each and every day!  I really felt eating lactation cookies helped with my milk supply and they were super yummy!  I would keep them in the freezer and enjoy them for a snack or when I had a craving for something sweet. 

As time went on I got a little bored with the Chocolate Chip ones I was making, you can find that recipe here.  I went to searching for a different yummy recipe and stumbled upon a Pumpkin Spice recipe.  I made a few changes to suit my liking and wanted to share it with you! 


Ingredients:
4 tbsp Flaxseed Meal
8 T Water
1 cup room temperature butter
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
1/2 cup pumpkin puree
2 cups whole wheat flour
1 tsp salt
1 tsp baking soda
1 T pumpkin pie spice
4 T brewer’s yeast (I buy it from Whole Foods or you can order online)
4 cups Old Fashioned Rolled Oats
1 cup white chocolate chips

Instructions:
Preheat the oven to 350 degrees. Mix the flaxseed meal and water in a small bowl and let sit for 5 minutes.

In a stand mixer, beat together the butter, sugar and brown sugar until creamed. Add the eggs, flaxseed meal/water, vanilla, pumpkin puree and mix well.

Add the flour, salt, baking soda, pumpkin pie spice, and brewer’s yeast and stir on low until combined. Finally add in the oats till combined and add the white chocolate chips.  

Use non-stick cookie sheets and line with parchment paper.  Spoon cookie dough onto cookie sheets (about 1 T dough per cookie) about 2″ apart. I use a 1" mini ice cream scooper to easily drop the dough onto the cookie sheets.  Bake for 12-14 minutes. Cool cookies on the cookie sheet for 1-2 minutes before transferring to a wire rack for final cooling. Enjoy and Share!

Chocolate Chip Lactation Cookies

One of my favorite things to bring New Mommies who chose to Breastfeed is some homemade Lactation Cookies!!  I myself have had and nursed 3 babies so I know that they are an awesome snack or treat and help with milk supply.  I had to exclusively pump for my 3rd child from 4-11.5 months old because he wasn't growing well.  We needed to monitor his milk intake for as well as adding formula to my pumped milk.  Long story, we will save that for another day :) 

Bottom line is these bad boys are a yummy, healthy and natural way to boost milk supply.  When I was nursing and especially when I was pumping I would eat 2-5 a day.  I felt these cookies really helped with my supply.  If you know a Mommy who is nursing and needs an extra boost in her milk supply or simply wants a healthy treat share this recipe with her or better yet, make her some! 


Chocolate Chip Lactation Cookies

Ingredients:
1 Cup Butter (Organic if possible)
1 Cup Sugar
1 Cup Brown Sugar
8 TBS Water
4 TBS Flaxseed Meal
2 Large Eggs
1 TSP Vanilla
2 Cups Whole Wheat or Oatmeal Flour
1 TSP Baking Soda
1 TSP Salt
4 TBS Brewers Yeast (SECRET INGREDIENT!)
3 Cups Old Fashion Oats
1 Bag Milk Chocolate Chips

Directions: 
1. Preheat Oven: 375
2. Mix Flaxseed Meal with Water, Set aside 3-5 minutes
3. In a mixer or by hand, cream Butter and Sugar
4. Add Eggs
5. Add Flaxseed Meal mixture and Vanilla
6. Sift Flour, Baking Soda, Salt, Brewers Yeast in small bowl
7. Add sifted ingredients to main mixture
8. Mix in Oats and Chocolate chips 
9. Line baking sheets with parchment paper and drop cookie dough onto baking sheets.
10. Bake at 375 degrees for 9-12 minutes

Yields: Depending how large you make cookies, this recipe makes about 4-6 dozen.
Variations could include:
1. Subbing white chocolate chips for chocolate chips and adding a bag of dried cranberries
2. Adding walnuts or pecans 
3. Adding Carmel bites and 2 tsp Sea Salt

Cookie Dough Greek Yogurt

One of my favorite food groups is DESSERT! Ha!

When I decided to clean up my diet it was hard to find sweet treats that were healthy and satisfying. This recipe has become a staple in my life!!!  Better yet, my husband and kiddos LOVE it!  You can get creative with this and make different combinations but this is the base I always use and is always a crowd pleaser.



Cookie Dough Greek Yogurt
Ingredients:
1 small container or 3/4 cup plain greek yogurt (I use non fat Fage greek yogurt)
2 tsp natural peanut butter
1 tsp agave nectar
1 tbsp mini chocolate chips (I use Enjoy Life vegan chips)
1 tsp vanilla extract (optional)

Directions:
Combine all ingredients and stir well! Enjoy!

7 days CLEAN EATING & Shakeology Super Sampler

I started my Final Burn before my Dirty 30 this week!  I want to be in THE best shape of my LIFE so I'm super focused and dialed in with my nutrition and workouts!  I've been following the 21 day fix extreme and Countdown to Competition meal plan since Monday and can I just say it has been hard!  The workouts I've got A-Ok but this carb depletion meal plan is tough at times.  I have a new respect for bikini competitors!  Regardless, I'm very focused and committed to the next 21 days!!  One of the best parts of the day is when I get to drink my Shakeology!  But, you might be reading this saying, "I NEED TO GET COMMITTED" BUT I JUST CAN'T FIND MY MOTIVATION!!!

That is what I am here for! My job is to help you find your inner strength, teach you how to be strong and teach you the basics of healthy choices!  I have done calorie counting, weight waters, my fitness pal, run marathons and could never lose body fat like I wanted!  I could never stick to a plan, lose weight and my energy levels were low, especially once I had 3 kiddos in the picture! 

When I found CLEAN eating on the 21 day fix, I realized there was another way to live.  I could eat every 2-3 hours, have energy, feel full and enjoy good tasting food all while reaching my health and fitness goals!  It almost sounds like it is to good to be true!  There are definitely days that I am more hungry than others but for the most part I feel great!  I have lost 25 pounds with exercising at least 5 days a week, clean eating and replacing 1 meal a day with Shakeology!  I have made it my mission to help others!  I want to help teach you my tips and tricks to successful lifestyle change.  

What has Shakeology done for me:
  • It is the one meal each day that I know I can grab an go!  When starting clean eating there is some plan and prep work that goes alongside.  Shakeology is the one meal I know that I can depend on in a pinch! 
  • Before Shakeology I had to nap when my kids napped.  I was so tired all the time!  I wen to bed at 9pm and woke at 7am and was STILL tired!
  • It kept me full for 2 - 3 hours!
  • It actually tastes really good, especially the Chocolate
  • I found that my husband and I weren't as sick or if we did get sick, it was very mild in comparison to before Shakeology.  I attribute this to the boost of nutrients and vitamins that my body was lacking previously.

Chocolate Shakeology Iced Latte

Today as I was walking around Downtown DISNEY I walked past Starbucks. I wanted an iced coffee soooo badly! I kept seeing people walk around with Starbucks cups and those darn green straws!!!  Ahhhhh!!!!  


I couldn't wait till I could get home to make myself a healthier version!!  Here is what I came up with!!  This yummy AND healthy MOCHA ICED LATTE!!

Dairy Free Oatmeal Banana Cookies - 21 day fix dessert

One of my all time favorites and vices is COOKIES!  I don't discriminate when it comes to cookies!  Sugar, chocolate chip, cutouts, gingerbread - you name it, I will eat it!  Since I've made a change to be healthier and eat cleaner cookies are limited.  Well, not anymore with these super yummy Dairy Free Banana Oatmeal Cookies!   

If you are following the 21 day fix  you should know that you can trade out one of your yellow contains for one of these yummy cookies!  

Banana Oatmeal Cookies
(Makes 8 cookies - Serving size is 2 and replaces 1Yellow container on the 21-Day Fix)


Ingredients:
Nonstick cooking spray
1 cup Old Fashioned Rolled Oats
2 tsp ground Cinnamon
1/4 tsp Sea Salt
2 medium ripe Bananas, mashed
1/4 cup golden raisins 
1/4 cup walnuts
1/4 cup semi-sweet chocolate chips (I used Enjoy Life Vegan chips)

Directions:

1. Preheat oven to 350 degrees.
2. Lightly spray baking sheet with nonstick cooking spray.
3. Combine oats, cinnamon and salt in a medium bowl, making sure to mix well.
4. Add mashed bananas, walnuts, golden raisins and chips if using, mix well.
5. Drop by heaping Tbsp onto your baking tray.
6. Bake for 14-15 minutes, or until they are firm.
7. Cool and Enjoy!

These cookies are a great Dairy Free option!  I sometimes enjoy them for breakfast on the go or if I'm having a sweet craving.  My kids also like them which is exciting!
