Hot Chocolate Cookies

Hot Chocolate is my kiddos FAV winter treat.  Heck, they even request it when it's warm!  When I found this recipe about 5 years ago I was intrigued.  Hmmmm....what would a Hot Chocolate Cookie taste like?  Pure bliss that's what!!! No, these aren't healthy per say but they are WORTH IT!


HOT CHOCOLATE COOKIES
Yields about 3 dozen cookies

Ingredients: 
2 sticks room temperature butter
1 cup sugar
2/3 cup brown sugar
2 eggs room temperature
1 tsp pure vanilla extra
3 1/4 cups flour
4 packages or 1/2 cup Hot Chocolate Mix (not sugar free)
1 tsp salt
1 1/4 tsp baking soda
1 cup milk chocolate chips
2 cups mini marshmallows

Directions: 

1) Preheat your oven to 350 degrees.  
2) Cream together both sugars and the butter until light and fluffy in a stand mixer.  
3) Slowly mix in the eggs and vanilla.
4) Slowly add in all dry ingredients, scrap the sides as needed.
5) Lastly stir in chocolate chips.
6) Line cookie sheets with parchment paper and drop cookie dough, I use a 1 T sized ice cream scooper.
7) Bake cookies at 350 degree oven for 9 minutes.  Remove from oven and top with 5-6 mini marshmallows, gently pressing them in a bit and cook an additional 2 minutes to where the marshmallows start to puff. 
8) Let cool a few minutes before removing from the pan (this helps them not break or loose shape). ENJOY!!
