Eeeek! So excited to share these with you guys! I don't personally count calories, but I know a lot of people do! These babies are 40 calories each and super yummy!
I have made this recipe SUPER simple for busy Moms like me! I know how crazy mornings can be and how easy it is to just grab a cup of coffee and skip breakfast. I make these egg cups and eat them for about 5 days. I pair with oatmeal or heat up for 30 seconds and rush out the door.
40 Calorie Egg Cups
Ingredients:
1 large red pepper
1 medium yellow onion
1/2 T olive oil
1 small carton egg whites
cooking spray
salt and pepper to taste
Directions:
1. Heat oven to 350 degrees. Dice veggies and saute in a pain on medium/high heat with 1/2 T olive oil. Cook for about 8-10 minutes till all water is cooked off. Add salt and pepper to liking.
2. Take a muffin tin that fits 12 muffins. Spray with cooking spray and add cooked veggies evenly amongst the tin. Take the small carton on egg whites and divide amongst the tin too.
3. Put muffins in the oven and bake for 20 minutes turning pan half way through cook time. Enjoy!

Lazy Sunday mornings on vaca make me want to out to breakfast! Back in the day my hubs and I would run long and go to Cracker Barrel or First Watch and down some pancakes! Banana granola crunch! Yummmm! We still do from time to time but these are now my go to when I crave pancakes and don't want to fall off course.
Gluten-Free Pancakes
Ingredients:
1.5 cups gluten-free oat flour (I make my own by blending oats in my Nutribullet)
3.5 tsp baking powder (gluten-free)
Pinch of pink salt
1 T agave
1 1/4 cup almond milk
1 egg
1/4 cup applesauce
Optional Toppings: berries, maple syrup, whipped cream
Cooking spray or healthy fat for non sticking
Directions:
1. Heat griddle on medium/high heat. In a large mixing bowl combine dry ingredients and stir to combine.
2. Add agave, egg, almond milk, and applesauce and whisk until mixed. Don't over mix.
3. Spray cooking spray or apply healthy fat of choice (olive/coconut oil) your griddle then pour out 1/4 cup of batter per pancake.
4. Let cook for 3-4 minutes and flip. Repeat until batter is finished. Top with topping of choice. Enjoy!

One thing you should know about me is I LOVE MAYO!!! I used to put double mayo on my sandwiches at delis y'all!! When I started my journey to healthy-ier eating mayo had to go away. I was sad. I eliminated it entirely after trying to use mustard and it just didn't work out for me.
That being said, just because I don't use it now doesn't meant that I don't miss it! I'm pretty sure I"m not alone. Some days you just need a sandwich with mayo but you don't want to feel guilt so you whip up a healthier alternative to mayo and slap it on some Ezekiel bread w/ boars-head turkey, turkey bacon, tomato and cheese! It turns out so yummy you want to share it with the world!!!
Mayo Substitute
Servings: 5
Ingredients:
4 Tablespoons Plain Greek Yogurt
1 Tablespoon Yellow Mustard
1/8 tsp salt
1/8 tsp pepper
1/8 tsp dried parsley
pinch of smoked paprika
Directions:
1. Take a small bowl and measure out all ingredients.
Stir till combined and Enjoy!!
Will stay in your fridge for 7 days. Use on Sandwiches, as a dipping sauce, as a topping to just about anything!! This is 21 day fix approved although I don't count it as the count would be so small. If you were very strict it would count as 1/12 of a red.
OMG OMG OMG!! I made a healthy dinner and my husband was actually excited!! Small wins!!
This recipe was super simple and yummy so I had to share!!
Caprese Chicken
Serves 2
Ingredients:
2 - 4 ounce Chicken Breasts
coconut oil cooking spray
1 red vine tomato
2 oz whole milk fresh mozzarella
dried parsley
salt & pepper
Directions:
1. Take a large grill pan and heat on medium high heat. Spray with coconut oil cooking spray and top with chicken breasts. Top with salt & pepper. Cook for 4 minutes and flip.
2. Spray with coconut oil cooking spray and sprinkle with salt & pepper again. Top with a large pan lid and cook for an additional 4 minutes. Repeat this step twice, so each side gets cooked for 4 minutes per side two times making sure that the chicken doesn't get too brown.
3. While the last side is cooking slice the tomato in 4 thick even slices. Slice 2 slices of whole milk mozzarella about 1/2 inch thick.
4. Once chicken is cooked through, top chicken and layer with tomato, cheese then tomato. Sprinkle with parsley and let rest for 3 minutes on the grill pan with the heat turned off.
5. Here I served with whole grain pasta, sauce and roasted zucchini for a yummy dinner!!

I'm getting ready to head into Week 2 of The Master's Hammer & Chisel and it has been so amazing to dive back into my nutrition and enjoying yummy meals like this!! Here are a few moments from my Week 1 journey.
I hope you had a great Halloween weekend with your families!! I know for us we had a GREAT time and ate lots of unnecessary candy which left me feeling like this....

Then as I started looking at the calendar with my jeans that were a little too tight and realizing that today marks 60 days left till the end of the year! Ugh!!! I am starting to feel so off course and grouchy. 12 months ago this feeling of being off course would have completely overwhelmed me and I would think that I need to go run 10 miles and count calories on my fitness pal. Not now...now I have tools and a support! I can do this!!!
Today is Day 1 of our 21 day Planks and Thanks challenge group. I'm re committing to clean eating and portion controlled eating. There. I said it. Now it's out there. It's not about just me making a commitment to myself anymore. Its public! Ahhhhh!!!
Sharing with others makes me very uncomfortable. I know that with uncomfortableness comes changes. It pushing me further than I would ever push myself alone. Its what I need to do but that doesn't make it easy...
I've been eating well, with cheats and treats here and there and working out 5-6 days a week but I've been steadily gaining body fat back. I've been in denial but my pants don't lie. They are getting tight and I've been feeling off. I'm more tired, grouchy and less present with my family. It breaks my heart to admit it but something has to change.
So thankful for the tools I have and people that are on this journey with me. Together we are stronger and I know I can't do this alone. So please help me stay accountable! Also help encourage me because I will have lots of challenging moments and days.

It's starting to feel like Fall and I'm craving Pumpkin Spice Lattes but I don't want to waste time going to the coffee shop or the money. I've made a yummy AND healthy Pumpkin Spice Latte that is vegan, paleo and gluten free! It is also free of any artificial colors or flavorings! Wait it gets better, it is under 50 calories a serving!! Say what?! I won't make you wait any longer....here's the recipe! Healthy Pumpkin Spice Latte
Makes 2 servings
Ingredients:
10 oz coffee, brewed strong
6 oz unsweetened almond milk
4 tsp Clean Eating Pumpkin Spice syrup (see recipe here)
1 packet stevia
Directions:
1) Brew coffee
2) Measure out almond milk and warm in microwave on high for 30 seconds
3) Combine all ingredients in a blender and blend on high for 20 seconds.
4) Divide evenly between 2 cups and enjoy!!

**If you are following the 21 day fix or CIZE meal plans this recipe counts as 1 tsp since according to the manual you technically can have 1 free tsp a day of pure maple syrup in your coffee and the almond milk amount is so small, 3 oz, in my opinion is not worth counting such a small amount of a yellow container. If you want to get super technical I would count it as 2 tsp to be on the safe side. One of my alllll time favorite treats is Chocolate Chip Cookies and when I found this recipe I did a happy dance!! Check out this healthier version of chocolate chip cookies that is KID & HUSBAND approved!!
Healthier Chocolate Chip Cookies
Prep time: 10 minutes Cook time: 14 minutes
Ingredients:
3 cups almond flour - I recommend Trader Joe's Brand for cost savings
1 tsp baking soda
1/4 tsp sea salt
1/4 cup coconut oil, organic
1/4 cup pure maple syrup or honey
1 large egg
2 large egg whites (1/4 cup)
1tsp pure vanilla extract
1/2 cup semi - sweet or dark chocolate chips
Directions:
1. Preheat oven to 375 degrees.
2. Line 2 baking sheets with parchment paper.
3. Combine almond flour, baking soda and salt. Mix and set aside.
4. Beat oil and syrup or honey in a large mixer bowl and blend for 4-5 mins. Add egg, egg whites and vanilla, beat for 2 minutes.
5. Add almond flour mixture to egg mixture and mix until blended. Fold in chocolate chips
6. Use cookie scooper and drop rounded tbsp sized balls of dough onto the baking sheet. Flatten cookies with fingers to give flatter cookie appearance as these cookies will not flatten.
7. Bake for 12-14 minutes or until golden brown. Enjoy!!

Tempeh! Have to admit, I've never heard of it or tried it until I made this recipe. I've heard that it's pretty bland but firm, I would have to agree! I knew if it was going to something I would eat it would have to have some more flavor. Insert GARLIC and some Parmesan to the rescue!! Better yet this is a yummy Vegetarian option and Vegan if you don't top with cheese and it's 21 day fix approved!!
Italian Tempeh
2 servings
Ingredients:
8 oz tempeh
2 tsp coconut oil divided
2 cloves garlic 1.5 cups sliced raw veggies (I used, 2 large carrots, 3 large white button mushrooms, 5 cherry tomatoes)
1.5 cups raw spinach
1/2 tsp Italian seasoning
salt & pepper or Adobo
sprinkle fresh parmesan Directions:
1) Take small non stick skillet and heat over medium high heat, add 1 tsp coconut oil and chopped garlic cloves, cook for 2-3 minutes.
2) Reduce heat to medium. Add sliced raw veggies and cook for 5 minutes, or until tender. Season with pinch of salt and pepper.
3) Once veggies are tender, add 1.5 cups raw spinach. Cook for an additional 2-3 minutes until spinach is cooked. Set aside or divide evenly between 2 plates.
4) Add 1 tsp coconut oil to non stick skillet and heat over medium heat. Slice tempeh into 1/4 inch slices. The 8 oz brick I bought made about 14 slices. Cook tempeh, turning 1-2 times so browned evenly. Sprinkle with Italian seasoning and salt and pepper to taste.
5) Place cooked tempeh evenly onto the cookies veggies. Sprinkle lightly with fresh parmesan.

This week has been wild with the kids starting back to school and my oldest starting Kindergarten! Amongst all the craziness, Timehop reminded me this week of Thomas' meet the teacher last year. I got tears in my eyes when I saw this photo.

This was the photo where I made my mind up to do something different with my life. To make a change. We all have moment where we have seen ourselves in a photo and we didn't like the way that we looked, but this was different. I cropped almost my entire body out of the photo when I posted it on Facebook and that was hard.
When I saw this photo, I saw the button that wouldn't close on my dress because the dress was too small. I saw an arm that made me really upset. I noticed that I was larger looking than my husband. How did this happen? What was I doing wrong? So many different emotions and thoughts ran though my mind and I was so upset with the way that I looked AND felt.
I thought I was eating healthy, I was training for a half marathon and I didn't know what I was doing wrong. I knew it would be harder to lose weight with having hypothyroidism and honestly, I thought I may never lose the weight. I had accepted the fact that I would be a size 10 and approx 20 pounds heavier than I wanted for the rest of my life.
Then, I heard about the 21 day fix from my coach posting her transformation on Facebook. I had heard about it before and been approached by another coach but the timing wasn't right for me. This time, I was ready! I knew Beachbody programs worked because I had tried Insanity a few years before and it kicked my butt, lol! The whole idea of portion control, clean eating and 30 minute workouts was exactly what this busy Mom of 3 needed!!

I absolutely love to host get togethers but always am looking for healthy yummy crowd pleasing dishes. This Quinoa Salad fits all my required criteria: Yummy! Easy to make! Makes a lot! Can be made ahead of time!
Quinoa Salad
Serves 10 (1 cup each)
Ingredients:
1/3 cup fresh lime or lemon juice
1 T ground cumin
1 T salt
1/3 cup olive oil
2 can black beans, drained and rinsed
4 cups water
2 cups dry quinoa, rinsed
1 medium red bell pepper
1 medium yellow bell pepper
1 medium orange bell pepper
1 bunch fresh cilantro, chopped
Directions:
1) Combine lime juice, cumin, salt, olive oil in a large bowl, whisk. Add black beans. Set aside
2) Bring water to a boil in a medium saucepan over high heat.
3) Add quinoa. Reduce heat to low, cover and cook for 10-12 minutes or until water is absorbed. Remove from heat. Set aside.
4) Dice peppers and cilantro, add to the bean mixture that is in a large mixing bowl. You need extra space as this is a large recipe. Toss till combined. Add in cooled quinoa and mix gently. Enjoy!
This salad is best if chilled for a few hours to cool completely. It stays well in the refrigerator for 2-3 days. This recipe is adapted from the Fixate Cookbook.

As a Stay at Home Mom (SAHM), I love that I can physically be with my kids during the day. I feel blessed to be able to stay at home with them because I know some families don’t have the choice. Some days are easier than others as a SAHM, but there’s a saying that I live by: The days are long but the years are short!
On the flip side, a downside to being a SAHM is the lack of financial contribution and ability to have a little something for yourself. I have been a SAHM for almost 6 years now. I have 3 children ages, 5, 4 and 22 months. I love them dearly but I found myself lost and lonely often. I never knew what I was doing wrong to help make these feelings go away. I was very involved in a local moms club, I was even President at one point. I have had my kids each involved in survival swim lessons, Musikgarden, Music with Mar, weekly playgroups, Preschool, etc. You name it, we’ve done it! Last year I was even asked to be a part of our local preschool’s board thinking it would help fill the void I’ve been feeling for awhile now. I needed more purpose. I had fire and drive in my soul that NEEDED to be put to use!!!!
After having my 3rd child I thought finally losing the baby weight and getting my body back onto a healthier pattern would be my missing link. I started the 21 day fix and fell in love with Beachbody. I went from a size 10 to a size 4. I have lost 25 pounds since October 2014 and have kept it off. I learned a lot about healthy eating, portion control and support. My love for the 21 day fix quickly turned into a passion for helping others achieve the same feeling I was feeling, the feeling of being ALIVE AGAIN! Actually enjoying what I see in the mirror. Not struggling with my clothes and getting upset each and every time I had to get dressed.
I became a Beachbody Coach at the end of October 2014 and haven’t looked back. What started out as a fun hobby to help keep me accountable on my own health and fitness journey opened my eyes to the ability to have an at home business. Don’t get me wrong, my first paycheck was $32 and change! This was definitely not get rich quick scheme. As time went on and I shared my story I started to help and inspire others. I was shocked at the response! I was starting to build a following, a team and an income with a passion I had for helping others while getting healthier myself! Most importantly I found something for myself again. I think as SAHMs we lose ourselves a little along the way. We focus so much on our children and husbands that we forget about ourselves. Our dreams. Our goals. We put it all on the back burner for them. While I believe in taking care of my family, I also believe in taking care of myself. In order to be a good Mom, I also have to take care of myself. I have been a Beachbody Coach now for 10 months! I cannot believe how this journey has changed my life inside and out. I want to share this opportunity with you.
You may be wondering: What do SAHMs do that help them be effective Beachbody Coaches??
1. I share my story on social media, with friends and family how Beachbody fitness programs and Shakeology can help them to lose weight and get fit at home. I was spending lots of time on social media before, now I have more of a purpose for the time I spend.
2. I encourage women, as I encourage my children but now it’s on their health and fitness journey in private fb groups we call challenge groups, providing feedback about their progress.
3. I help my coaches on our team page, Team Progress NOT Perfection how to use duplication to achieve the same business success as me. We are busy Mommies, we need training and how tos!
4. I manage my time and resources to effectively get my daily tasks accomplished in a timely manner. Just as I do for my family, I plan out my day around playgroups and preschool.
5. I use and teach goal setting to my customers and coaches to help them achieve the results they are working so hard for.
6. I use my story to share my own personal experience so I can reach others like me who need my help. I was doing this on fb Mommy pages about motherhood experiences, asking for advice, etc. This was a way I can still do that but help other Moms on their health and fitness journey.
7. I use my natural desire to help others succeed in a new way every day. As SAHMs we put others first naturally, so helping others comes very easy to us.
8. I genuinely care about others! I lead with my heart just as I do as Mommy.
It is through a few vital behaviors every day since I started this journey that has has created my success. I control how fast or slow I want to grow my business. I set the goals I want to reach. I set my hours and choose my teammates. I work before my kids get up, during nap time and when they go to bed. YOU set your own schedule, time and effort according to YOUR goals!!

Now let's fast forward some from health and fitness journey to building a business. Ever heard of a vision board? I'm sure you have. First time I ever heard of one was when Oprah talked about it when I was in college. That was about 10 years ago. I never made a vision board till I was 29 years old, took me almost 9 years!!!
I wanted to share with you a vision board I made in December of 2014, about 8 weeks after becoming a Beachbody coach. I created a list of the dreams and visions I had for the next year of my life. It was more of a to do list with time measurements. It was really scary. Scary to put those dreams and visions on paper but I'm so glad I did it.
As you see here, one of the dreams I had was to take my husband Jason on a trip that I used my Beachbody money to pay for by 8/1. It was something even though I had earned the money to do in one week I was putting off. Taking time for myself and as a couple has always been really difficult for me. I had so much guilt. Guilt I put on myself. After praying about it and talking it through my wonderful mother, she encouraged me to take the trip, surprise Jason with a small weekend getaway. Had it not been for that board it would have never happened.
So I took the plunge and booked it! Wow that felt pretty awesome!! Our weekend wasn't super fancy. It was at a local hotel in Crystal River and I booked swimming with manatees, that got rained out and a kayak for the afternoon. We laid by the pool and enjoyed people watching at the pool bar. In this picture we had just enjoyed a quiet dinner, something we aren't used to with 3 kids under 6 but it was perfect. It was 2 nights away to reconnect and surprise the man who has done so much for me and our kids. I can only dream that one day I will be able to do more.

I love Mexican food and anything that is a crowd pleaser. Sometimes it's hard when you are feeding a crowd or a family to find items that will work for everyone. This dish is one that you can serve to even non clean eaters and they can add toppings they want to meet their needs.
Steak Fajitas
Serves: 4 (2 fajitas each)
Ingredients:
1 1/2 tsp olive oil
2 medium peppers (green, yellow or red) cut into strips
1 medium onion sliced
2 cloves garlic chopped
1 lb raw extra lean beef sirloin cut into 2-inch strips
1 tsp ground chili powder
1 tsp ground cumin
1 tsp crushed red pepper flakes
1/2 tsp sea salt
1/2 cup salsa
8 6-inch corn tortillas
4 Tbsp plain greek yogurt
optional:
1/4 cup fresh cilantro
lime wedges
Directions:
1. Heat oil in large non stick skillet over medium high heat
2. Add bell peppers, onion and cook for 5 - 6 minutes or until tender
3. Add garlic, cook for 1 minute
4. Add beef, chili powder, cumin, pepper flakes, salt and cook for 7-8 minutes or until meat is no longer pink
5. Evenly top each tortilla with beef mixture, add salsa, yogurt, cilantro and serve with a lime wedge

I'm a huge believer in salads and I'm always looking for yummy salad dressings to try. Most days I just use a good quality extra virgin olive oil and fun vinegar but other times when I'm having a get together or luncheon I want something fancier. That's where this yummy Raspberry Vinaigrette comes in from the Fixate Cookbook!
Raspberry Vinaigrette
serves: 11 approx 2 TBSP each
Ingredients:
1/2 cup fresh raspberries
2 Tbsp honey
1 Tbsp plain greek yogurt
3 Tbsp fresh lemon juice
1 1/2 tsp finely grated lemon peel
1 Tbsp chopped fresh or 1 tsp dried tarragon
1/2 tsp pepper
salt to taste
1/2 cup extra virgin olive oil (recommended good quality)
Directions:
1. Rinse berries. Place raspberries, honey, yogurt, lemon juice, lemon peel, tarragon, pepper, and salt in blender, cover and blend until smooth.
2. Slowly add oil, blending constantly until well mixed
Tip: Store leftover dressing in a covered container in the refrigerator. If dressing thickens when cold, hold at room temperature for 30 mins before serving.

Soups are a great plan and prep meal. They are easily made ahead and seem to get better as they sit and soak as the week goes on. I have a few friends who LOVE chicken tortilla soup but when we started the 21 day fix they had to stop eating it and missed it! I was delighted to see a copy of a healthier version in the new Fixate Cookbook!
Mexican Chicken Tortilla Soup
Serves: 4 (1.5 cup servings)
Directions:
1. Preheat oven to 350 degrees
2. Line baking sheet with parchment paper and place tortillas on baking sheet. Bake for 8-10 mins until toasted and crispy. Remove from oven and break into pieces and set aside.
3. Heat oil in large saucepan over medium heat. Add onion and celery, cook for 5 mins stirring frequently. Add garlic, cook for 1 min.
4. Add tomatoes and cook for an additional 5 mins, set aside
5. Take onion mixture and add 2 cups broth and half of the corn tortilla pieces to blender and blend until smooth.
6. Add blended mixture back to large saucepan. Add 4 cups chicken broth, chicken, carrots, oregano, chili powder, salt and pepper. Bring to a boil over medium heat and reduce to low, cook an stir occasionally for 10 mins, or until carrots are tender.
7. Divide into bowls and serve evenly with avocado, cilantro and remaining tortilla pieces.

Confession: I LOVE MAYO!! Always have, always will!! I'm a sucker for anything creamy.
When I made the choice to clean up my nutrition, eliminating mayo was really difficult. First I went cold turkey but then learned I could sub mayo or sour cream for fat free plain Greek yogurt. I understand it's not the exact same, but it gets easier and easier over time.
An old fav lunch of mine was chicken salad. I know a lot of others enjoy chicken salad too so I was bound and determined to find a healthy substitute. If you're following the 21 day fix, I've included equivalents for you!! You're welcome :)
Healthy Chicken Salad: 21 day fix approved
Yield 2 Servings
Ingredients:
1.5 cups cooked diced chicken breast
3/4 cup plain greek yogurt
1/2 cup diced cucumber
1 cup green or purple halved grapes
1 T yellow mustard
salt and pepper to taste
Instructions:
Dice chicken and cucumbers. Half grapes. Combine with greek yogurt and mustard and stir till well combined. Add salt and pepper to taste.
Serve over salad greens or with whole grain crackers. In image show above I used 1.5 cups raw spinach, romaine, cherry tomatoes and cucumbers.
If you are following the 21 day fix or 21 day fix extreme this recipe would count as 1.5 red, 0.5 purple, 1/4 green.
