Chocolate Chip Lactation Cookies

One of my favorite things to bring New Mommies who chose to Breastfeed is some homemade Lactation Cookies!!  I myself have had and nursed 3 babies so I know that they are an awesome snack or treat and help with milk supply.  I had to exclusively pump for my 3rd child from 4-11.5 months old because he wasn't growing well.  We needed to monitor his milk intake for as well as adding formula to my pumped milk.  Long story, we will save that for another day :) 

Bottom line is these bad boys are a yummy, healthy and natural way to boost milk supply.  When I was nursing and especially when I was pumping I would eat 2-5 a day.  I felt these cookies really helped with my supply.  If you know a Mommy who is nursing and needs an extra boost in her milk supply or simply wants a healthy treat share this recipe with her or better yet, make her some! 


Chocolate Chip Lactation Cookies

Ingredients:
1 Cup Butter (Organic if possible)
1 Cup Sugar
1 Cup Brown Sugar
8 TBS Water
4 TBS Flaxseed Meal
2 Large Eggs
1 TSP Vanilla
2 Cups Whole Wheat or Oatmeal Flour
1 TSP Baking Soda
1 TSP Salt
4 TBS Brewers Yeast (SECRET INGREDIENT!)
3 Cups Old Fashion Oats
1 Bag Milk Chocolate Chips

Directions: 
1. Preheat Oven: 375
2. Mix Flaxseed Meal with Water, Set aside 3-5 minutes
3. In a mixer or by hand, cream Butter and Sugar
4. Add Eggs
5. Add Flaxseed Meal mixture and Vanilla
6. Sift Flour, Baking Soda, Salt, Brewers Yeast in small bowl
7. Add sifted ingredients to main mixture
8. Mix in Oats and Chocolate chips 
9. Line baking sheets with parchment paper and drop cookie dough onto baking sheets.
10. Bake at 375 degrees for 9-12 minutes

Yields: Depending how large you make cookies, this recipe makes about 4-6 dozen.
Variations could include:
1. Subbing white chocolate chips for chocolate chips and adding a bag of dried cranberries
2. Adding walnuts or pecans 
3. Adding Carmel bites and 2 tsp Sea Salt
