40 Calorie Egg Cups
Eeeek! So excited to share these with you guys! I don't personally count calories, but I know a lot of people do! These babies are 40 calories each and super yummy!
I have made this recipe SUPER simple for busy Moms like me! I know how crazy mornings can be and how easy it is to just grab a cup of coffee and skip breakfast. I make these egg cups and eat them for about 5 days. I pair with oatmeal or heat up for 30 seconds and rush out the door.
40 Calorie Egg Cups
Ingredients:
1 large red pepper
1 medium yellow onion
1/2 T olive oil
1 small carton egg whites
cooking spray
salt and pepper to taste
Directions:
1. Heat oven to 350 degrees. Dice veggies and saute in a pain on medium/high heat with 1/2 T olive oil. Cook for about 8-10 minutes till all water is cooked off. Add salt and pepper to liking.
2. Take a muffin tin that fits 12 muffins. Spray with cooking spray and add cooked veggies evenly amongst the tin. Take the small carton on egg whites and divide amongst the tin too.
3. Put muffins in the oven and bake for 20 minutes turning pan half way through cook time. Enjoy!
**If you are following the 21 day fix meal plan or other Beachbody portion controlled container program these count as 1 red, 1 green and 1/8 tsp (if you're super strict otherwise I don't count)

Gluten-Free 21 Day fix approved Pancakes
Lazy Sunday mornings on vaca make me want to out to breakfast! Back in the day my hubs and I would run long and go to Cracker Barrel or First Watch and down some pancakes! Banana granola crunch! Yummmm! We still do from time to time but these are now my go to when I crave pancakes and don't want to fall off course.
Gluten-Free Pancakes
Ingredients:
1.5 cups gluten-free oat flour (I make my own by blending oats in my Nutribullet)
3.5 tsp baking powder (gluten-free)
Pinch of pink salt
1 T agave
1 1/4 cup almond milk
1 egg
1/4 cup applesauce
Optional Toppings: berries, maple syrup, whipped cream
Cooking spray or healthy fat for non sticking
Directions:
1. Heat griddle on medium/high heat. In a large mixing bowl combine dry ingredients and stir to combine.
2. Add agave, egg, almond milk, and applesauce and whisk until mixed. Don't over mix.
3. Spray cooking spray or apply healthy fat of choice (olive/coconut oil) your griddle then pour out 1/4 cup of batter per pancake.
4. Let cook for 3-4 minutes and flip. Repeat until batter is finished. Top with topping of choice. Enjoy!
2 pancakes are 1 yellow if following the 21 day fix or other portion controlled container program from Beachbody.

Shake & Run with Team Progress NOT Perfection
Something I've wanted to do ever since I began my journey with Shakeology and the 21 day fix meal plan in October of 2014 was a running group! To be honest, I was nervous. I didn't think anyone would want to do it because I assumed they would want to follow the workout plans provided by Beachbody. As time has gone on and I've grown in both my physical strength but also in confidence. I've learned that I don't have to be like everyone else and I am feeling courageous enough to try something NEW after finishing up the Disney Princess Half Marathon: INSERT > SHAKE & RUN!
It is a private group for anyone committed to running 3X/week, cross training 3X/week and drinking Shakeology OR the Pre/Post Workout drinks from the Beachbody Performance Line. We will begin March 28th and finish up April 17th!
What should you expect?
We will share clean eating recipes, meal plans and a hybrid workout calendar. Also, we will share our journey in the group as well as supporting one another through the course of the group.

Mexican Lasagna : 21 day fix approved
Who doesn't love a good casserole?!
This dish is full of healthy veggies, carbs and I even have a link to a homemade taco seasoning, link attached below. Better yet one portion includes 1 protein, 1 carb, 1 veggie and 1 healthy fat so it's a complete meal! A necessity for this on the go Mom of 3!
Mexican Lasagna - 21 day fix approved
1 pound ground turkey or beef
1/4 cup SW seasoning (see blog)
1 cup water
Cooking spray
2 bell peppers chopped
1 onion chopped
8 corn tortillas
1/4 cup corn
1 can black beans (drained and rinsed)
1 cup shredded Mexican cheese
Optional Toppings:
Diced tomatoes
Greek yogurt
Avocado
Directions:
1. Brown ground meat. Add seasoning and 1/2 cup water and simmer for 10 minutes.
2. While meat simmers add cooking spray to large sauce pan. Add chopped veggies and sauté, approx 5-7 minutes stirring occasionally.
3. In a 9X13 inch pan spray cooking spray. Slick 6 inch corn tortillas in half. Arrange bottom of pan with 1/2 the shells, so 8 pieces total.
4. Add cooked meat/seasoning mixture, 1/2 cup black beans, veggies and 1/4 cup cheese.
5. Add remaining tortillas, meat, beans, veggies. Add corn. Too with remaining 3/4 cup cheese.
6. Bake at 350 for 20-25 minutes. Serve with optional toppings. Enjoy!
**note if you're following the #21dayfix or other color coded Beachbody programs this recipe is 1 yellow, 1 red, 1 green and a little less than 1 blue per serving. This leaves you extra room for avocado or guac on top! You're welcome!

Slightly Bubbly Citrus Water
I have a cold...boooo!!!This rarely happens, I think my last one was about a year ago. Thanks clean eating and Shakeo!
I know the best way to deal is to flush this baby out. I wanted additional vitamin C but not a ton of added calories so I made up this bad boy Slightly Bubbly Citrus Water
Ingredients:
1 lemon
1 orange
4 cups water
1 can orange @lacroixwater
1 packet stevia
Directions:
1. Squeeze juice of 1 lemon and 1 orange into blender. Add 1 cup water and stevia. Blend.
2. Place contents in a pitcher and stir in remaining water and sparkling water. Divide amongst water bottles and ENJOY !

Open-Faced Meatball Sub
When I started eating cleaner I was afraid it meant I had to give up yummy foods. I'm always on a mission to make family friendly meals that work for everyone! I have 3 kids and they are pretty picky but one thing they love is meatballs! Hence the creation of this recipe!
Open-Faced Meatball Sub
Ingredients:
6 cooked meatballs of choice (I keep frozen pre made turkey meats in my freezer)
1/2 cup tomato sauce
1 Ezekiel Bread English muffin
Sprinkle of Mozzarella
Sprinkle of Parmesan
Optional parsley
Directions:
1. Heat up meatballs and sauce on stove or in microwave safe bowl.
2. Slice Ezekiel English muffin in half and toast to liking.
3. Top English muffin with meatballs and sauce. Sprinkle with cheese and optional parsley then microwave to melt.
If you're following the 21 day fix meal plan this would count as 2 yellows, 1.5 reds, 1 purple, 1/4 blue depending how much cheese you use.
