Lasagna bowls

A few weeks ago I saw an inspiration meal, spaghetti squash lasagna bowl! I opened the recipe and it was filled with some not so good for you ingredients. SO I created this yummy AND good for you complete meal!!! Enjoy! 



Spaghetti Squash Lasagna Bowls 
Serves 2

Ingredients: 
1 medium spaghetti squash 
2 tsp olive oil 
1 0.6 oz bag baby spinach 
4 cloves garlic 
3/4 cup ricotta 
3/4 cup spaghetti sauce 
1 pound ground turkey 
1 oz mozzarella cheese 
1 oz Parmesan cheese 

Directions: 
1. Cut squash in half length wise. Bake at 350 degrees for 50 mins. 
2. While squash is cooking brown ground turkey. Add spaghetti sauce and stir till combined. Transfer cooked turkey into another bowl and side aside.  Add 2 tsp olive oil into pan with leftover turkey fat. Add garlic and spinach. Sauté till cooked. Add ricotta cheese to pan. Set aside and wait till squash is cooked. 
3. Once squash is cooked. Shred it and empty into the pan with the spinach. Stir till combined. 
4. Take empty spaghetti squash shells and layer the meat mixture, squash/spinach mixture and repeat for 2 layers total. 
5. Top with mozzarella, split between 2 boats. Top with Parmesan, split between 2 boats. Place boats back on pan and back in oven for 10 mins. Then broil for 5 mins to make top lightly browned and melt the cheese. Enjoy!!
