Almond Protein Squares
Ingredients:
1 cup oat flour
1 cup vanilla protein powder
1/2 cup almond flour
1/2 tsp salt
1 cup natural almond butter
2 tsp vanilla extract
1 tsp almond extract
1/2 cup unsweetened almond milk
1/4 cup dark chocolate, melted (I used enjoy life chips)
1 tsp coconut oil
Directions:
1. Line 8x8 baking pan with parchment paper.
2. Add flours, protein powder and salt into food processor. Pulse till combined.
3. Add almond butter, extracts and milk and pulse for 1-2 mins till dough forms.
4. Remove dough from food processor and place in pan. Press into pan with fingers. Freeze for 15 minutes.
5. While dough is freezing take dark chocolate and place in a microwave safe container. Add 1 tsp coconut oil and microwave for 30 seconds.
6. Remove dough from freezer. Drizzle chocolate mixture over top. Freeze for 10 minutes.
7. Remove from freezer. Cut into 16 squares. Optional top with sea salt. Store in freezer or up to 1 week in airtight container.
These bars are 21 day fix, CIZE and Hammer & Chisel approved. They count as 1/2 yellow, 1/2 red and 2 tsp per bar.
