Cucumber & Tomato Refresh Salad

One of the best parts of the 3 day plant based vegan cleanse I'm doing is the dinners! They are so yummy and the recipes are ones I will keep making over and over again! Wanted to share this yummy cucumber and tomato salad 🍅💚🍅 



Cucumber & Tomato Salad 
Makes 1 serving 

1 T Apple cider vinegar 
1 tsp balsamic vinegar 
2 tsp fresh lemon juice 
1 tsp olive oil 
1/2 medium cucumber halved and sliced lengthwise 
1/2 cup cherry tomatoes halved 
1 T chopped red onion 
1 T chopped fresh parsley 
1 T chopped fresh basil 
Salt to taste 

Combine first four ingredients. Mix well. Set aside. Place remaining ingredients in a large bowl. Drizzle with dressing and serve. 

**I don't always have fresh herbs so dried is also an option
