Blueberry Pie Oatmeal

Because some days you just want pie for breakfast!!

Something I've started doing more regularly is making a big pot of steel cut oats and portioning it out for the week. This gives me a quick healthy breakfast I pop in the microwave for 1 min and BOOM... breakfast is served. I can't eat oatmeal plan so I add different toppings. My new fav is 1/4 cup blueberries!! It tastes like blueberry pie!! Hence, the creation of this recipe!



Blueberry Pie Oatmeal
Ingredients: 
1/2 cup cooked steel cut oats 
1/4 cup fresh blueberries 
1 tsp agave 
1 graham cracker (optional)

Directions: 
1. Portion out oatmeal into a microwave safe bowl. Add washed fresh blueberries. 
2. Microwave on high for 1 min so blueberries are cooked. Stir and squish a few blueberries for added flavor. 
3. Top with 1 tsp agave and graham cracker for fun! Enjoy!!

Healthy Peanut Butter Cups

Oatmeal Energy Clusters

Wow! These may be my fav new Clean Cheat!!!



Oatmeal Energy Clusters 

Ingredients: 
2 cups rolled oats 
1/2 cup chocolate chips (I use #enjoylife chips)
2/3 cup unsweetened coconut flakes
1/2 cup natural peanut butter 
1/3 cup honey 
1 tsp vanilla extract 
1/4 tsp salt 

Directions: 
1. In a large bowl mix together the oats, chocolate chips, and coconut.
2. Add the peanut butter, honey, vanilla, salt and mix well until combined.
3. Chill in the refrigerator for one hour then roll out balls to approximately 1 inch in diameter. Store in an airtight container for up to one week. Enjoy!

WARNING!! These won't last long! They are amazing!!

Turkey Bacon Egg Cups

Looking for an easy meal prep meal? I'm a busy Mom of 3 so I know if I don't have food pre made I will make bad choices! These are so yummy and easy! 



Ingredients: 
7-8 slices Turkey bacon 
1 small carton egg whites (I prefer organic)
1/4 cup white cheddar cheese 
cooking spray (I use coconut oil spray)
Parchment paper 

Directions: 
1. Preheat oven for 350 degrees. Line a baking sheet with parchment paper. 
2. Lay turkey bacon on baking sheet and bake for 5 mins, flip and bake 5 additional minutes. 
3. While baking spray muffin tin with cooking spray. Line each cup with 1 slice of cooked turkey bacon once it's finished cooking. 
4. Fill each cup 7/8ths of the way with egg whites from carton. Bake on 350 degrees for 20 mins. 
5. After 20 mins remove and add cheese. Evenly sprinkle small amount of the cheese amongst each of the 7-8 cups. Bake additional 5 minutes. Enjoy!!

The BEST Guacamole

OH! MEE! GEEE! This is THE BEST Guacamole!!! I just had to share!!



The BEST Guacamole 

Ingredients: 
2 hass avocados 
1/2 diced red onion 
1 medium diced vine tomato
1 T chopped cilantro 
1 glove minced garlic 
1 T hot sauce (I use tabasco) 
Juice of 1 lime 
salt and pepper 

Directions:
1. Make sure that all veggies and herbs are chopped. Combine all in a large bowl and gently stir. 
2. Add avocados after you take skin off and seed out. Add lime juice and hot sauce. Stir well. Note: Use back of the spoon you're using to stir guacamole with to crush up larger chunks of avocado. 
3. Season with salt and pepper. Serve with corn chips or raw veggies. Enjoy!!!
