Oatmeal Energy Clusters
Ingredients:
2 cups rolled oats
1/2 cup chocolate chips (I use #enjoylife chips)
2/3 cup unsweetened coconut flakes
1/2 cup natural peanut butter
1/3 cup honey
1 tsp vanilla extract
1/4 tsp salt
Directions:
1. In a large bowl mix together the oats, chocolate chips, and coconut.
2. Add the peanut butter, honey, vanilla, salt and mix well until combined.
3. Chill in the refrigerator for one hour then roll out balls to approximately 1 inch in diameter. Store in an airtight container for up to one week. Enjoy!
