Because some days you just want pie for breakfast!!
Something I've started doing more regularly is making a big pot of steel cut oats and portioning it out for the week. This gives me a quick healthy breakfast I pop in the microwave for 1 min and BOOM... breakfast is served. I can't eat oatmeal plan so I add different toppings. My new fav is 1/4 cup blueberries!! It tastes like blueberry pie!! Hence, the creation of this recipe!
Blueberry Pie Oatmeal
Ingredients:
1/2 cup cooked steel cut oats
1/4 cup fresh blueberries
1 tsp agave
1 graham cracker (optional)
Directions:
1. Portion out oatmeal into a microwave safe bowl. Add washed fresh blueberries.
2. Microwave on high for 1 min so blueberries are cooked. Stir and squish a few blueberries for added flavor.
3. Top with 1 tsp agave and graham cracker for fun! Enjoy!!

Do You think you could do this in the slow cooker? Looks so yummy.
ReplyDeleteLisa, I think you could but it may get mushy. I would maybe use frozen blueberries so it didn't over cook the blueberries.
