Roasted Holiday Veggies
1 large butternut squash peeled and cubed
6-7 cups Brussels sprouts (I either buy in bulk or 3 pre packed bags)
1 cup fresh cranberries
1/2 cup dried cranberries
1/4 cup pure maple syrup
1/4 cup olive oil
Generous sprinkling of salt and pepper
1 cup pecan halves
Directions:
1. Preheat oven to 350 degrees
2. Place veggies and fruits evenly between 2 large roasting pans
3. Evenly disburse the syrup and olive oil. Top with pecans, salt and pepper.
4. Place in oven for 45 minutes. Stirring once half way through cook time. Serve in a pretty dish and enjoy 💚❤️✨
