Hummus Crusted Chicken
Ingredients:
2 4-6 oz chicken breasts
4 T plain hummus
1/8 tsp smoked paprika
1/8 tsp dried parsley
1/2 lemon for juice
Directions:
1) Take a baking pan and spray with cooking spray. Set oven to 375.
2) Place chicken breasts in pan. Top with 2 T hummus each.
3) Sprinkle with paprika and parsley evenly between the 2 chicken breasts. Bake on 375 for 30 minutes.
4) Optional : squeeze fresh lemon juice evenly between each chicken breast.
I served it here with steamed broccoli for a healthy dinner!!
