The ultimate open faced EGG sandwich

Do you love scrambled eggs? Do you love melted cheese? I do too!  When I was starting my health and fitness journey I learned that I was eating good foods but too much of them.  Two of the items I was over eating was healthy fats and carbs.  I learned I can still eat savory yummy foods but just in the right amounts.  


Ingredients: 
2 eggs
salt
pepper
1 slice cheese
1 slice bread
cooking spray

Instructions:
1. Take a medium skillet/pan, heat to medium and spray cooking spray.
2. While pan heats, toast one slice of bread.  
2. Crack eggs in a small bowl, add salt and pepper to taste, whisk for 20 seconds.
3. Cook scrambled eggs over medium heat.  When cooked completely add slice of cheese and remove from heat.
4. Remove toast from toaster and place on plate.  Let cheese melt slightly on top of eggs and place on top of toast.

Serve with fruit and enjoy!
